MONACO. Great surprises as promised by the Hôtel Hermitage Monte-Carlo when it reopened on July 1st have come true! On July 21 the Hôtel will create an exceptional event. Three Michelin star chef Yannick Alléno will set up his Parisian restaurant “Pavyllon” for an evening in the famous Monegasque palace awarded One Michelin star. It will be a unique moment to discover the Modern Cuisine from this gastronomic location while enjoying one of the most beautiful views of the Mediterranean, the terrace of the restaurant “Le Vistamar” at the Hôtel Hermitage Monte-Carlo.
Key chef of “Modern Cuisine”, Yannick Alléno will reveal for a summer evening his vision of French cuisine, and his visionary approach to culinary art that combines know-how, excellence and adventure, autograph of his restaurants.
It will be an ephemeral moment to savor a 3 stars cuisine in a similarly famous place of French cuisine, the restaurant Le Vistamar, which will offer to this event its magnificent view from its terrace diving on the Mediterranean, which embraces the Hercule port, the rock and the palace of Monaco at once.
Alléno has concocted a seven courses menu that will immerse the diners into the heart of Modern Cuisine with Mediterranean accents. Crisp Peas, zucchini flower tart, Bavarian white onion, herbs and condiments, suckling lamb over a wood fire, “Bagnetto rosso” sauce, or the Red mullet fillet, chermoula, salt and cumin. All the products chosen by Chef Alléno for this dinner are fresh, local and seasonal.
This event is just a new strong symbol of the traditionally great Art of Living carried by the Monte-Carlo Société des Bains de Mer Group, through constantly renewed experiences. Moreover, diners will spend a moment in total serenity and relax thanks to the “Monte-Carlo Cares” program, a sanitary device certified by Bureau Veritas for the safety of its customers and its employees. The Hôtel Hermitage Monte-Carlo, one of the most exclusive destination in Europe, is also one of the safest worldwide.

About the Ledoyen Pavillon
Since Yannick Alléno took over the destiny of this emblematic place in 2014, the Pavillon Ledoyen, located in the gardens of the Champs-Elysées, has become the most prestigious Parisian chef’s house thanks to its 3 star restaurants (Pavyllon *, the ‘Abysse ** and Alléno Paris ***). Open in the fall of 2019 on the ground floor of the Pavillon Ledoyen, Pavyllon is Yannick Alléno’s third culinary proposal in this historic ensemble. Independent of the two other addresses on the site, Yannick Alléno called on the interior designer Chahan Minassian for the creation of this latest addition, succeeding the chic brasserie “Le Cercle”. Pavyllon constitutes a renaissance for the man who arrived in this temple of gastronomy in 2014, and in 2016 obtained the operating concession for 15 years from the City of Paris.
Chef-owner Yannick Alléno has been committed to the renewal of this Parisian institution since 1792, when another restaurateur, Antoine-Nicolas Doyen, transformed the modest inn into a renowned establishment. Adorned with one star in the 2020 Michelin guide, this gastronomic counter is added to the three-star restaurant Alléno Paris, upstairs, as well as to the Abyss, the sushi counter also starred. With three Michelin-starred restaurants in the France 2020 guide, and large reception and banquet halls, the Pavillon Ledoyen is today, thanks to chef Yannick Alléno and his 150 employees, an essential place for haute cuisine in Paris. The chef and his teams compose several partitions to meet everyone’s requests and tastes with a common denominator, excellence.
These achievements make the Pavillon Ledoyen the first independent fine dining destination in the world to have three star-rated restaurants in the 2020 MICHELIN Guide.
“I’m immensely proud! To receive Michelin stars for all three of my Pavillon Ledoyen restaurants! We can hardly believe it, but it’s really happened! It’s a real delight to share this honour with my exceptional kitchen and dining room teams, who have together made this a unique and quite extraordinary place! And above all, there’s the delight of passing on our vision, and offering our diners the very best! I think this is a first in the history of the MICHELIN Guide. I can still hardly believe it”, said an emotional Yannick Alléno on hearing the news of this year’s awards.
