A NOBLE CAUSE AT THE HEART OF SBM MONTE-CARLO RESTAURANTS

MONACO. After the Hôtel Hermitage Monte-Carlo in 2015, the Monte-Carlo Bay Hotel & Resort and the Thermes Marins Monte-Carlo in 2016, and the Café de Paris Monte-Carlo in 2019, it’s the turn of the Hôtel de Paris Monte-Carlo to get involved alongside the Prince Albert II of Monaco Foundation for the promotion of responsible consumption of seafood.
At the heart of the restaurant Le Grill in the Salon Churchill, on Tuesday August 18, 2020, Ivan Artolli, General Manager of the Hôtel de Paris Monte-Carlo and Olivier Wenden, Vice-President and Managing Director of the Prince Albert II of Monaco Foundation, to formalize the commitment of all the hotel’s restaurants through the signature of the Mr.Goodfish partnership agreement.
THE MR. GOODFISH PROGRAM
“Like other establishments of the Société des Bains de Mer, it seemed essential to us to be part of the continuity of the Mr. Goodfish commitment to the preservation of our marine species alongside the Prince Albert II of Monaco Foundation. Our goal must be a common goal to advance mentalities and awareness of the importance of preserving our planet at all levels“. declared Ivan Artolli, General Manager of the Hotel de Paris Monte-Carlo. Launched in 2010, under the aegis of the Nausicaa aquarium, the Mr. Goodfish program was born from a simple observation: today too many species of fish are overfished and threatened with extinction, while many are unknown , abundant and moreover delicious. The Prince Albert II of Monaco Foundation has been coordinating the Mr. Goodfish program throughout the south-eastern region of France and Monaco since 2013, following its commitment to the preservation of marine species.
It is in this capacity that the Hôtel de Paris Monte-Carlo is committed to its noble cause. All of the Hôtel de Paris Monte-Carlo restaurants under the aegis of Executive Chef Franck Cerutti are committed to promoting in their menus fish species specifically recommended by the Mr.Goodfish lists. This spirit of sustainable fishing will be found on the menu of restaurants in the hotel. A real promise of commitment.
Here are several dishes that will enter the dynamic of the Mr. Goodfish program this fall:
Refreshed blue lobster, crunchy marinade & herbs – Saffron risotto & salicornia, tender cuttlefish & squid in tempura – Mediterranean sea bass on the embers, garnished with an aioli – Royal sea bream from local fishing as we like on the Riviera – The Mr.Goodfish mention will be made on the menus with the affixing of an icon indicating the dishes included in the program.
This program is an additional commitment to the environmental approach of the Hotel de Paris Monte-Carlo that reopened in total security the gaming rooms, terraces and Le Salon Rose restaurant and that remained open since 15 March, offering room service breakfast. The metamorphosis of the Hôtel de Paris Monte-Carlo, whose work was completed in 2018, has been accompanied by an increasingly strong commitment to sustainable development. A commitment rewarded in 2019 by the prestigious Green Globe certification, which recognizes all of the sustainable and environmental actions implemented within the hotel. To continue in this process, joining the Mr.Goodfish program has become obvious for the Hôtel de Paris Monte-Carlo. The hotel restaurants, which cater to an increasingly demanding international clientele, are aware of the importance of having a responsible gastronomy, which notably involves the preservation of marine species.
A commitment that is part of the environmental and sustainable approach pursued by Monte-Carlo Société des Bains de Mer since 2007, notably with the implementation of its own environmental charter and even more recently the signing of the National Energy Transition Pact signed in January 2019. In addition, after this period of unprecedented health crisis, it is essential for the Resort to continue to implement a sustainable and environmentally friendly policy within the establishments.
The Hôtel Hermitage Monte-Carlo, the Monte-Carlo Bay Hotel & Resort, the Thermes Marins Monte-Carlo, the Café de Paris Monte-Carlo and the Hôtel de Paris Monte-Carlo are part of the Monte-Carlo Société des Bains de Mer Group that has set up for the safety of its customers and employees the Monte-Carlo Cares program, a health system certified by Bureau Veritas, so that the most exclusive destinations in Europe is also the safest.

Restaurants: starting Tuesday 2 since the end of July, one by one all our restaurants re- opened for your Summer vacation! Like the re-opening of the Brasserie of Café de Paris Monte-Carlo and its new terrace, together with the inauguration of the new Place du Casino and Mada One at One Monte-Carlo, the Bar Américain, The Grill at Hôtel de Paris Monte-Carlo and the famous Le Louis XV Alain Ducasse.
The Monte- Carlo Bay Hotel & Resort restaurants, Orange Verte, Las Brisas, Blue Gin, are also working. As for the Blue Bay Hotel, whose restaurant is in full force, it has remained open since 15 March, offering room service breakfast whereas the outdoor swimming pool and lagoon have been open since 6 June. The Hôtel Hermitage Monte-Carlo reopened the Limun and the Vistamar. Also vith a view, do not miss La Rascasse around the port, and for a refreshing cocktail the Blue Gin happy hour, the Coya Pisco Lounge Bar inspired by Peruvian fusion or the iconic Buddha Bar Monte-Carlo, all “night and day”. Our bars and restaurants have always maintained the strictest health and safety standards in their kitchens and dining rooms. Adjustments and arrangements have been made to ensure a safe and optimal experience: Arrangements have been made to enable social distancing in the dining rooms, with limited place settings, additional spacing between the tables, and special floor markings. In accordance with health regulations, we are unable to provide coat check services in our restaurants.Reservations are strongly recommended. Masks are compulsory for customers who have not yet been seated. Each table may seat a maximum of four to six people, except in the Monte-Carlo Beach restaurants, where each table may seat up to a maximum of ten. Bar and counter services are not permitted. Digitised copies of our menus may be viewed using dedicated QR codes. Copies are also displayed on menu stands or printed on disposable paper. Wellbeing areas and bathing facilities: As part of the preventive health measures being put in place, a limited number of users will be permitted in bathing areas, sports facilities and changing rooms at any one time. The number of deckchairs provided has been reduced to meet social distancing requirements, as has the number of machines available in gyms. Sports equipment and machines are disinfected after each use. All therapists have been provided with masks, as well as eye protection or visors. Advance booking is required for all treatments. Treatment rooms are fully disinfected both before and after your treatment. Any equipment used (brushes, scissors, manicure equipment, tweezers, etc.) will be thoroughly disinfected. Hairdryers are not to be used outside of the hair salon.
